Due to their unique nutrient composition, pistachios are considered to be one of most nutrient rich snack nuts.  A 30g serving of pistachios (about 1-ounce), with 49 kernels, has 170 calories and offers a variety of different vitamins, minerals and beneficial phytonutrients.  Pistachios are an excellent source of vitamin B6, copper and manganese and a good source of protein, dietary fiber, thiamin, and phosphorus.  They are one of the lowest calorie and lowest fat nuts.  Pistachios offer polyphenol antioxidants and provide more lutein and zeaxanthin than any other nut.  Among snack nuts, pistachios also provide phytosterols which compete with cholesterol for absorption in your body.
